For Sinterklaas I received Gwyneth Paltrow’s cookbook It’s All Good and I am loving it so much! All of the recipes are healthy, simple, and easy.
I recently made her Orange Marmalade – you only need 3 oranges, 1 lemon, a cup of honey, and water. I only had to buy the oranges!
I was little confused when I first decided to make the marmalade. I thought that jams and jellies needed gelatin to become thick. Luckily Google is my best friend and I learned that oranges have a lot of pectin, which makes the sauce thick.
This orange marmalade is perfect on a slice of nut and seed bread.
- 3 oranges
- Juice of 1 lemon
- 1 cup of honey
- 2 cups of water
- Cut the oranges in half. Scoop the insides-the flesh, juice and seeds into a food processor and reserve the skins. Puree the insides until smooth and pour into a saucepan.
- Slice the skins into matchsticks and add them to the pan along with the lemon juice and the water. Turn the heat to high and bring the mixture to a boil.
- Lower the heat and simmer for 1.5 hours uncovered or until the rinds are very, very soft. Add the honey and turn the heat back to high. Boil the marmalade stirring quite often, for 10 minutes or until the marmalade begins to pull away from the sides of the pan.
- Turn off the heat and let cool before transferring to a jar. Keeps in the fridge for up to a month.
